Sanitary and compositional quality of the raw milk produced in the Quebrada Vieja region, Soracá (Boyacá)

Sanitary milk quality refers to the somatic cells count (as an indicator of udder health and the presence of Mastitis), and compositional quality focuses on the total solids content (which includes percentages of fat, protein, lactose, and minerals) found in milk. Taking into account the above, research was developed with the purpose of identifying the sanitary and compositional quality of the raw milk produced in the village Quebrada Vieja of the municipality of Soracá (Boyacá). In the cross-sectional and exploratory research, 35 milk productions were evaluated, the somatic cell content of the raw milk was determined using the Ekomilk Scan, and the percentage of total solids was measured by using the LAC SPA ultrasonic milk analyzer. It was found that the average of the somatic cells was 307,743 CS/mL of milk, these results were corroborated with the application of a checklist in which health problems were found. As for the total solids content, the results were: fat 3.27 %, protein 2.89 %, lactose 4.36 % and salts 0.64 %. These values reflect the fact that producers do not use any nutritional management that helps to improve the compositional quality of milk.
